Hyatt Regency Bangkok Sukhumvit opens Spectrum for brunch once a month
Bangkok’s newest rooftop lounge and bar, Spectrum, is switching gears from dusk to dawn with the launch of a new monthly Sunday brunch. The hip nightlife spot, that opened its doors in the Hyatt Regency Bangkok Sukhumvit in late March, will transform its 29th floor into a buffet brunch setting on the last Sunday of each month. The three and a half hour seating, from 11:30am - 3:00pm, includes a free flow of house wine and prosecco and a range of dishes.
The antipasto selection includes fresh oysters and home-cured salmon. Fans of a good grill can fill their plate with meats like tomahawk steak, lamb chops and bacon. Highlights from the hot selection are truffle scrambled eggs, rock lobster spaghetti, and mushroom risotto. A few items from Spectrum’s regular menu such as crispy calamari and caramelized chicken wings have also made their way onto the brunch spread. Those with a sweet tooth should visit The Library area in Spectrum for desserts like coconut creme brulee, hot lava chocolate cake, and a range of French cheeses accompanied by dried fruit.
“We’re matching our sky-high views with a sky-high range of dishes,” said Frederik Farina, executive chef and director of food and beverage at the Hyatt Regency Bangkok Sukhumvit. “Our Market Cafe has a traditional Thai food focus so with our Spectrum brunch buffet we wanted to draw more on my Italian heritage and introduce a range of premium Italian and international dishes.”
Spectrum’s interiors also have a more international vibe than the hotel’s Thai dining counterpart. Designed by the Japanese design firm Super Potato, Spectrum is a multi-faceted venue spread over three levels.
Brunch will take place on the 29th floor, where handcrafted basket-weave doors lead into a plush gathering space with marble floors and an open kitchen. The spacious living room area of the floor is set to entice guests to linger with deep, cushioned chairs and wooden tables spread out over a velvety blue carpet. Brunch guests will also have access to the spacious alfresco terrace that spans level 30 and 31 and features a large open deck with seats for two and alcoves framed by verdant trees with huge daybeds and private tables.
Spectrum Lounge and Bar’s Sunday brunch is set for the last Sunday of every month. The price is THB 1,900 ++ per person and includes the buffet and unlimited wine and prosecco.
