Yamagoya Ramen @ Gaya Street



Yamagoya Ramen now open in Kota Kinabalu, this is a famous ramen chains from Japan with over 140 of franchised outlets. Recent year restaurants specializing in Kyushu-style ramen seem to be popping up around West Malaysia. Kyushu-style ramen is Tonkotsu (pork bone) ramen with a deliciously thick broth that is so rich, in fact, that if you let it sit for a few minutes, a slightly disconcerting film will appear on the surface of your soup. What's in the Signature Yamagoya Special Ramen? Noodles, slices of fatty pork "char siu", hard-boiled eggs with a creamy bright-orange yolks, beansprouts, chopped spring onion, bamboo shoot, seaweed, fried garlic and black fungus. I noticed that there are many Japanese expatriate patrons in Yamagoya Ramen, this looked promising.

On each table there is a nifty grinder filled with sesame seeds, along with a jar of pickle ginger. You can add sesame seeds, chili oil and pickle ginger for extra flavors.

Gyoza, RM11.00
A plate of six small succulent dumplings that are pan-fried till crispy filled with chunks of minced pork.


Mukashi Special Ramen, RM24.00
Noodles served with tonkotsu soup, topped with 2 slices of pork (cha siu), boiled egg (ni tamago), seaweed sheet (nori), bamboo shoot, beansprouts, black fungus, fried garlic and spring onions. It was delicious, the milky color pork bone broth tasted savory and wasn't too salty or oily. I like the thinly sliced but tender pork (char siu) a mix of layered fats and lean meat, lovely aroma results from roasting and a melting texture.
 

Spicy Tobanjan Ramen, RM22.00
More or less looked like tonkotsu ramen with an additional spicy bean paste served separately. Spicy but not overpowered the broth taste.
