Wat Tan Ho, which is completely immersed in clear, egg's gravy, is one of my favourite dish. Although it is a dish widely available in most Asian's restaurants, to cook a good plate of Wat Tan Ho is easier to said than done. Firstly, the noodles must be smooth and fragrantly good. The egg's gravy must had a great balanced of flavours and the texture shouldn't be too gluey.

The Flat rice noodle was lightly stir-fried with soy sauce, then topped with egg's gravy cooked with seafood and choy sum.
